तारळी, ज्याला सार्डिन म्हणूनही ओळखले जाते, हा एक लहान आणि तेलकट मासा आहे जो विशेषतः भारताच्या पश्चिम किनारपट्टीवर, अरबी समुद्रात मोठ्या प्रमाणावर आढळतो. याचा स्वाद समृद्ध आणि मऊसर असून थोडा तेलकटपणा असतो. तारळीमध्ये ओमेगा-३ फॅटी ॲसिड्स, प्रथिने आणि जीवनसत्त्वे भरपूर प्रमाणात असतात. ती मासे करी, तळणी आणि पारंपरिक कोकण व गोवा खाद्यपदार्थांमध्ये वापरली जाते. पोषणमूल्ये अधिक असल्यामुळे तारळी लोकप्रिय आणि परवडणारी मासा आहे.

Tarli (Sardine) तारळी पड़वा, वाशी

🌿 Konkani Style Tarli (Sardine) Curry

Ingredients:

  • Fresh Tarli (Sardines) – 500g (cleaned and slit)

  • Oil – 3 tbsp (preferably coconut oil)

  • Mustard seeds – 1 tsp

  • Curry leaves – 10–12

  • Onions – 2 medium (finely chopped)

  • Garlic – 6 cloves (crushed)

  • Ginger – 1 inch piece (grated)

  • Green chilies – 2 (slit)

  • Tomatoes – 2 medium (pureed)

  • Tamarind paste – 1 tbsp (or lemon-sized tamarind soaked in warm water)

  • Red chili powder – 1.5 tsp (adjust to taste)

  • Turmeric powder – ½ tsp

  • Coriander powder – 1 tbsp

  • Garam masala – ½ tsp

  • Salt – to taste

  • Fresh coriander – for garnish

  • Water – 1 to 1.5 cups

Instructions:

  1. Soak tamarind in warm water and extract juice; keep aside.

  2. Heat oil in a pan, add mustard seeds, and when they splutter, add curry leaves.

  3. Add chopped onions, garlic, ginger, and green chilies; sauté until onions turn golden brown.

  4. Add pureed tomatoes and cook until oil separates from the masala.

  5. Add turmeric, red chili powder, coriander powder, and salt; mix well.

  6. Pour in tamarind juice and about 1 cup water; bring the mixture to a boil.

  7. Add the cleaned and slit sardines gently to the curry. Cover and simmer for 10–12 minutes or until the fish is cooked through.

  8. Sprinkle garam masala, stir gently, and garnish with fresh coriander.
